New Year’s Eve Recipe – Fried Rice

Today I am continuing my preparations for our family New Years Eve celebration. Only two days left until 2013. It’s hard to believe that the year is almost over. A few days ago I decided to do an Asian themed menu for our extravaganza – Lumpias and fried rice. I have already shared my Lumpia recipe with you. Today I have my fried rice recipe to share with you too. It’s super yummy and very easy to make. My stepdad loves it!

Fried Rice Recipe

Ingredients:
1/2 cup rice, uncooked
2 1/2 tablespoons butter
1/2 cup onion, chopped
1/2 cup carrot, chopped
1/3 cup green onion, chopped
1 1/2 tablespoons sesame seeds
2 1/2 eggs
2 1/2 tablespoons soy sauce
Salt & Pepper to taste

Cooking Instructions:

-Cook rice according to package directions. Set aside.
-In a large skillet melt butter. Add onions, carrots and scallions. Sauté until carrots are translucent. Set aside.

-Heat oven to 350°F (175°C).

-Place sesame seeds in a shallow pan. Bake until golden brown (10 to 15 minutes), shaking pan occasionally for even color.

-Lightly grease another skillet. Beat eggs and pour into hot skillet. Cook as you would scrambled eggs.

-Combine rice, vegetables, sesame seeds and eggs. Add soy sauce and stir. Add Salt and pepper to taste.
